Ingredients

  • Mozzarella cheese as required
  • Medium potatoes 6
  • Olive oil for drizzling
  • Black peppercorns, crushed to taste
  • Salt to taste
  • Sea salt ½ cup
  • Black olives, pitted and sliced 3 to 4
  • Red and yellow capsicum triangles 2
  • Keya All Purpose Seasoning for sprinkling
  • Chive strips as required

How to Make Cheesy Jacket Potatoes (Stepwise Photos)

Method

  1. Preheat oven at 200°C.
  2. Place 4 pieces of aluminium foil on the worktop. Place one potato on each foil. Drizzle some olive oil on them and brush all over. Sprinkle some crushed peppercorns and salt and wrap them.
  3. Put sea salt on a baking tray. Place wrapped potatoes on top of the salt, keep the baking tray in the preheated oven and bake for 15-20 minutes. Remove from oven and cool.
  4. Halve two potatoes. Grate some mozzarella cheese on top of one halved potato. Place 2 sliced olives to make eyes and a red or yellow capsicum triangle below to make a nose on each half.
  5. Discard sea salt from the baking tray, place these potato halves on it and gratinate in oven till cheese melts.
  6. To prepare classic jacket potato, make a criss-cross slit on the remaining 4 potatoes. Grate some mozzarella cheese and fill it in the slits. Sprinkle some Keya All Purpose Seasoning on top. Place these potatoes on a serving platter.
  7. Put some chive strips on top of eyes of halved potatoes to make hair. Place these potatoes on the same serving platter and serve immediately.
