Make this easy sweet that will delight the whole family

Ingredients

  • Dark chocolate biscuits 10 to 12
  • Butter 4 tbsps
  • Cream cheese ½ cup
  • Whipped cream ¼ cup
  • Castor sugar ½ cup
  • Icing sugar for dusting
  • Strawberries, hulled and sliced 8 to 10

Methods

  • Crush some dark chocolate biscuits in a grinder and transfer into a mixing bowl.
  • Add butter and mix well. Put the mixture on a butter paper and spread it evenly. Cut into medium sized rectangles and keep them on a plate. Keep the plate in the refrigerator for about 2 hours.
  • Mix cream cheese, whipped cream and castor sugar in a bowl. Fill this mixture into a piping bag fitted with a star nozzle.
  • Keep a biscuit-mixture rectangle on each serving plate, pipe some cream mixture rosettes over it, keep another rectangle and repeat the layers once.
  • Dust some icing sugar on top of these layers and cover with sliced strawberries. Serve immediately.

Ingredients

  • Cooking chocolate, chopped 200 gms
  • Butter 100 gms
  • Full cream 100 gms
  • Refined flour 1 cup
  • Eggs 2 to 3
  • Whipped cream 200 gms

Methods

  • Boil 1 cup water in a non-stick pan, add butter and let it melt.
  • To prepare ganache, take full cream in another non-stick pan and bring it to a boil.
  • Take chocolate in a bowl, add the boiling full cream and stir continuously till well blended.
  • Preheat oven to 180º C.
  • Add flour to water-butter mixture and mix till the mixture gets rough pastry consistency.
  • Transfer into another bowl, add eggs and beat the mixture till all the ingredients blend well. Transfer this mixture into a piping bag.
  • Pipe rectangles on a greased baking tray, keep the tray in the preheated oven and bake for 20-25 minutes.
  • Fill another piping bag with whipped cream.
  • Take the tray out, slit them horizontally in the centre without cutting through, pipe in the whipped cream.
  • Dip the eclairs in the chocolate ganache and arrange them on a serving platter and serve.

Ingredients

  • Carrots, grated 400 gms
  • Sweet condensed milk 400 gms
  • Fresh khoya, crumbled 100 gms
  • Fresh cream 100 gms
  • Pistachios, chopped ½ cup
  • Green cardamom powder ½ tsp
  • Almonds, chopped ½ cup

Methods

  • Take a deep non-stick pan, add carrots condensed milk and cook on medium heat, stirring, till the mixture comes to a boil.
  • Add khoya and keep stirring. Once the mixture thickens, add cream, mix and cook till all the ingredients blend properly.
  • Cool and transfer the mixture into a piping bag and chill in the refrigerator.
  • Spread some condensed milk in a plate and some pistachios in another plate. Dip the rims of martini glasses in condensed milk and then in pistachios.
  • Pipe the gajar mousse into the glasses. Sprinkle cardamom powder and almonds on top and serve.

Ingredients

  • Refined flour (maida) 200 gms
  • Butter, chilled 200 gms
  • Whipped cream 100 gms
  • Kiwi, chopped 1
  • Strawberries, chopped 4 to 5
  • Green grapes, halved 1 cup
  • Orange, peeled, segments separated and halved 1

Methods

  • Take refined flour in a mixing bowl, add butter and rub in with your fingertips till the mixture resembles breadcrumbs. Add a little chilled water and gather into a dough taking care not to knead it. Wrap the dough in cling film and keep it in the refrigerator for 20-25 minutes.
  • Preheat oven to 180º C.
  • Take the dough out of the refrigerator. Dust some dry flour on the worktop, place the dough on it and roll it out as thinly as possible into a rectangle sheet.
  • Cut the dough into roundels with a cookie cutter, put the roundels into tart moulds and press lightly. Dork with a fork so that the dough doesn’t rise while baking.
  • Keep the tart moulds in the oven and blind bake them for 10-12 minutes or till they turn a light golden.
  • Take them out of the oven. Arrange them on a serving plate and let them cool down.
  • Take whipped cream in a piping bag and pipe the cream into the tart shells. Top them with chopped fruits and serve.

  • Almonds, ground 1 cup
  • Milk 500 mls
  • Rice, soaked and ground ¼ cup
  • Sweet condensed milk 200 gms
  • Green cardamom powder ½ tsp

Methods

  • Boil milk in a deep non-stick pan.
  • Put rice in a mixer jar and grind to a paste with a little water. Add the paste to the milk and mix well.
  • Add ground almonds and keep stirring. Add cardamom powder and mix well and let the mixture simmer for 4-5 minutes.
  • Add condensed milk and keep stirring till well blended and the rice is completely cooked.
  • Pour the phirni into earthenware bowls (kasores) and let them cool down to room temperature.
  • Keep them in the refrigerator to chill before serving.

Methods

  • Melt butter in a non-stick pan, add brown sugar and mix till it melts.
  • Add cinnamon powder and mix.
  • Peel and slit the bananas vertically, add them to brown sugar mixture and mix gently so that they are well coated. Add rum.
  • Transfer the bananas onto serving platters and serve with ice-cream and pancakes.
