    • Vanilla essence 1 tsp
    • Baking soda 1 tsp
    • Salt 1 tsp
    • Colourful gems a few

How to Make Monster Cookies (Stepwise Photos)

Method

  1. Preheat oven to 170º C. Grease a baking tray with some butter.
  2. Take brown sugar, sugar and butter in a mixing bowl and beat with an electric beater till light and fluffy.
  3. Add eggs and vanilla essence and continue to beat for 2 minutes more.
  4. Add baking soda and mix well. Add refined flour and salt and mix by the cut and fold method till everything comes together to make a dough.
  5. Divide the dough into equal portions and shape them into round cookies. Place the cookies on the baking tray. Decorate them with gems.
  6. Place the tray in the preheated oven and bake for 15-20 minutes.
  7. Remove from oven and set aside to cool down to room temperature. Arrange them on a serving platter and serve.

Thank you for the amazing instructions.

I have success w/ my dosa but does not last long stored in the refrigerator.

Maybe I am fermenting for too long, or add the salt before the rise?

I also was wondering if it is important to blend separately or can it be blended all together?

Hi Chaitrali,
Yes, cut down the fermentation time and add salt only to the required portion at the time of making the dosa. Also storing in smaller containers just enough for a day helps. Once the batter in a larger container is disturbed (by stirring or scooping out a little etc), I feel it turns sour faster. You can blend them together if you want. But we do it separately because we want the dal batter to become fluffy and the rice batter slightly coarse. Fluffy dal batter makes the dosas light and coarse rice batter makes them extra crispy without making the dosas hard. Hope this helps
