- Liquid glucose 2 tablespoons
- Silver varq for garnishing
How to Make Pista Barfi (Stepwise Photos)
- Heat a non stick pan and add ¾ cup sugar in it.
- Next add ¼ cup water and keep stirring till the sugar dissolves.
- Once the sugar dissolves, add ½ tablespoon milk
- Stir it well and discard the scum that rises to the surface.
- Cook till the syrup thickens slightly.
- Add liquid glucose and mix till well combined.
- Add ghee and mix well.
- Add pistachio powder, mix well till the mixture comes together to form a lump.
- Transfer the mixture into a bowl and let it cool slightly. Apply ghee on your palms and knead the mixture slightly.
- Spread this mixture on the barfi tray and spread evenly.
- Apply some ghee on a rolling pin and roll on the surface to make it even.
- Garnish with silver varq and let it set at room temperature.
- Cut into diamonds, or your desired shape.
- Arrange them on a serving platter and serve.
