Ingredients

    • Over ripe medium sized bananas, peeled and mashed 4
    • Fresh coconut, scraped 1 cup + to sprinkle
    • Butter to grease
    • Refined flour 2 cups + to dust
    • Baking powder 1 tsp
    • Baking soda 1 tsp
    • Maple syrup 2 tbsps
    • Oil 2 tbsps

How to Make Banana Coconut Tea Loaf (Stepwise Photos)

  1. Preheat the oven to 180º C. Grease 2 rectangular aluminium loaf tins with some butter and dust some dry flour.
  2. Take refined flour in a mixing bowl, add coconut, baking powder and baking soda and mix well with a spoon.
  3. Add bananas, maple syrup and oil and mix with your hand to make a slightly stiff dough.
  4. Put the dough equally in the prepared loaf tins and tap them lightly on the work top.
  5. Keep the tins on a baking tray, place the tray in the preheated oven and bake for 20-25 minutes.
  6. Bring the tin out of the oven and let it cool for about 10 minutes before demoulding the loaves.
  7. Slice and arrange on a serving platter and serve with cups of hot tea.

Thank you for the amazing instructions.

I have success w/ my dosa but does not last long stored in the refrigerator.

Maybe I am fermenting for too long, or add the salt before the rise?

I also was wondering if it is important to blend separately or can it be blended all together?

Hi Chaitrali,
Yes, cut down the fermentation time and add salt only to the required portion at the time of making the dosa. Also storing in smaller containers just enough for a day helps. Once the batter in a larger container is disturbed (by stirring or scooping out a little etc), I feel it turns sour faster. You can blend them together if you want. But we do it separately because we want the dal batter to become fluffy and the rice batter slightly coarse. Fluffy dal batter makes the dosas light and coarse rice batter makes them extra crispy without making the dosas hard. Hope this helps
