    • Dark chocolate, chopped 2 cups
    • Orange 1
    • Star anise powder 1 tsp
    • Sugar 4 tbsps
    • Sweet condensed milk 4 tbsps
    • Fresh cream 2 cups
    • Digestive biscuits 5 to 6
    • Cocoa powder 4 tbsps

How to Make Chocolate Truffles (Stepwise Photos)

Method

  1. Take chocolate in a big bowl. Boil sufficient water in a deep pan, keep the bowl over it and melt the chocolate.
  2. Grate the rind of the orange and set aside in a small bowl. Separate the segments, peel and deseed them and put them in another small bowl
  3. Take the bowl off the boiler, add star anise powder, sugar, 4 tbsps condensed milk and fresh cream and mix well. Keep the bowl in the refrigerator for 20-25 minutes.
  4. Crumble digestive biscuits and put into another bowl, sprinkle cocoa powder and mix well.
  5. Take the chocolate out and using a melon scooper, take roundels from the chocolate mixture and roll them in the biscuit-cocoa powder mixture till they are well coated.
  6. Spread the remaining biscuit-cocoa powder mixture in a serving platter, keep the chocolate rounds over it. Sprinkle orange segments and orange zest over them. Serve immediately.

Thank you for the amazing instructions.

I have success w/ my dosa but does not last long stored in the refrigerator.

Maybe I am fermenting for too long, or add the salt before the rise?

I also was wondering if it is important to blend separately or can it be blended all together?

Hi Chaitrali,
Yes, cut down the fermentation time and add salt only to the required portion at the time of making the dosa. Also storing in smaller containers just enough for a day helps. Once the batter in a larger container is disturbed (by stirring or scooping out a little etc), I feel it turns sour faster. You can blend them together if you want. But we do it separately because we want the dal batter to become fluffy and the rice batter slightly coarse. Fluffy dal batter makes the dosas light and coarse rice batter makes them extra crispy without making the dosas hard. Hope this helps
