    • Sugar ¾ cup
    • Warm milk 2 tablespoons
    • Nutmeg powder a pinch
    • Green cardamom powder 1/4 teaspoon
    • Almonds blanched, peeled and sliced 5-6 + for garnishing
    • Pistachios blanched, peeled and sliced 5-6 for garnishing
    • 2 tsp charoli + for garnishing

How to Make Kesar Shrikhand (Stepwise Photos)

  1. Take 1 ½ cup hung curd into a bowl.
  2. Add ¾ cup sugar to it. Mix it well using a spoon or whisk.
  3. Now add a pinch of nutmeg powder to it.
  4. Add ¼ tsp green cardamom powder to it. Mix it well.
  5. Now, take another bowl, place a strainer over it and strain this mixture into the bowl .
  6. Next, add a large pich of saffron, soaked in milk.
  7. Now add 6-8 blanched, peeled and silvered almonds.
  8. Add 2 tsps charoli to it and mix it until well combined and let it chill in the refrigerator.
  9. Serve chilled and garnish it with soaked kesar, pistachios, almonds and charoli.

Thank you for the amazing instructions.

I have success w/ my dosa but does not last long stored in the refrigerator.

Maybe I am fermenting for too long, or add the salt before the rise?

I also was wondering if it is important to blend separately or can it be blended all together?

Hi Chaitrali,
Yes, cut down the fermentation time and add salt only to the required portion at the time of making the dosa. Also storing in smaller containers just enough for a day helps. Once the batter in a larger container is disturbed (by stirring or scooping out a little etc), I feel it turns sour faster. You can blend them together if you want. But we do it separately because we want the dal batter to become fluffy and the rice batter slightly coarse. Fluffy dal batter makes the dosas light and coarse rice batter makes them extra crispy without making the dosas hard. Hope this helps
