A sweet meringue
based cookies enhanced with the addition of desiccated coconut
- Castor sugar 1 cup
- Desiccated coconut powder 2 cups
- Egg whites 1 cup
Step 1.Take sugar, egg white and coconut powder in a bowl and mix well. Transfer into a non-stick pan and cook on a low heat, stirring continuously, till the sugar melts. Take the pan off the heat and cool.
Step 2.Preheat oven to 180º C. Line a baking tray with butter paper.

How to Make Coconut Macroons (Stepwise Photos)
Method
- Take sugar, egg white and coconut powder in a bowl and mix well. Transfer into a non-stick pan and cook on a low heat, stirring continuously, till the sugar melts. Take the pan off the heat and cool.
- Preheat oven to 180º C. Line a baking tray with butter paper.
- Put the mixture into a piping bag fitted with a star nozzle. Pipe small round cookies on the baking tray.
- Keep the tray in the preheated oven and bake for 15- 20 minutes.
- Take the tray out and let it cool down to room temperature. Arrange on a serving platter and serve.
