Tofu is a healthy replacement for paneer in this simply curry

Ingredients

  • Tofu, cut into small cubes 200 gms
  • Medium carrot, peeled and diced 1
  • Medium onion, diced 1
  • Baby corns, diagonally sliced 5
  • Medium green capsicum, diced 1
  • Broccoli florets, blanched 8 to 10
  • Oil 1 tbsp
  • Tomato, chopped 1 cup
  • Turmeric powder ½ tsp
  • Black pepper powder to taste
  • Salt to taste

How to Make Curried Tofu with Vegetables (Stepwise Photos)

Method

  1. Heat oil in a non-stick pan, add carrot, onion, baby corns, capsicum, salt, turmeric powder and black pepper powder, mix well and saute for 3-4 minutes.
  2. Add tomatoes and salt and saute for 2-3 minutes.
  3. Add tofu and broccoli, mix and cook for 2-3 minutes.
  4. Now add ¼ cup water, mix and cook on medium heat for 2-3 minutes or till the moisture is absorbed.
  5. Transfer into a serving bowl and serve immediately.
