Fruit cubes served in a mixture of milk and vanilla ice cream

Ingredients

  • Medium kiwis, roughly chopped 6 to 8
  • Medium oranges, peeled and separated into segments 4 to 6
  • Milk 4 cups
  • Vanilla ice creams 8 cups

Methods

  • Put kiwis into a blender jar and blend into a puree. Transfer into a bowl. Similarly blend orange segments into puree, transfer into another bowl.
  • Pour the purees into separate ice trays, keep them in a freezer and freeze them to get fruit cubes.
  • Put milk and ice cream in the blender jar and blend to a smooth shake.
  • Pour the prepared shake into 4 tall glasses. Drop in some fruit cubes in each glass and serve immediately.

Ingredients

  • Apples, peeled, cored and cut into cubes 2 cups
  • Hung yogurt (chakka) 1 cup
  • Lemon juice 1 tbsp
  • Nutmeg, grated 1 tsp
  • Sugar ½ cup
  • Cinnamon (dalchini) powder ½ tsp
  • Ice cubes 10

Methods

  • Pour lemon juice over apples to prevent them from turning black. Put apples, hung yogurt, nutmeg powder, sugar, cinnamon powder and ice cubes in a mixer jar and blend till smooth.
  • Pour into serving glasses and serve chilled.

  • Low fat yogurt 2 cups
  • Melon seeds (magaz) 1 tsp
  • Almonds, chopped 1 tsp + to garnish
  • Pistachios, chopped ½ tsp
  • Saffron 3 to 4 strands
  • Honey 1 tbsp

Methods

  • To make a healthy Malai Lassi, put bananas, melon seeds, almonds, pistachios, saffron, low fat yogurt and honey into a beaker and blend it with a hand blender till smooth.
  • Pour into serving glasses, garnish with almonds, pistachios and saffron strands and serve.

  • Yogurt 1 cup
  • Cucumbers, peeled and roughly chopped 2
  • Fresh mint leaves, chopped 2 tbsps
  • Fresh parsley, chopped 2 tbsps
  • Salt to taste
  • Ice cubes as required
  • Sour cream 3 tsps + to garnish
  • Chives, finely chopped 2 tbsps

Methods

  • Put yogurt, cucumber, mint leaves, parsley, salt and some ice cubes in a blender and blend till smooth.
  • Add sour cream and blend again.
  • Pour into serving shot glasses and garnish each glass with chives and a dollop of sour cream.

  • Milk
  • Cocoa powder

It is creamy, it is full of flavour and it is totally rejuvenating

Ingredients

  • Milk 4 cups
  • Sugar 8 tbsps
  • Cocoa powder ½ cup
  • Cornflour 2 tsps
  • Cinnamon (dalchini) powder ¼ tsp
  • Nutmeg (jaiphal) powder ¼ tsp
  • Almond essence / vanilla essence 1 tsp

Methods

  • Mix sugar, cocoa powder, cornflour and cinnamon powder in a small bowl.
  • Heat milk in a deep non-stick pan.
  • Add a little milk to the cocoa powder mixture and mix well. Add it to the remaining milk in the pan and cook, stirring continuously, for 2-3 minutes or till it starts to bubble and boil. Do not allow it to become too thick.
  • Pour into a bowl and whisk to make it frothy. Add nutmeg powder and almond essence.
  • Pour into individual glasses and serve hot.

  • Milk
  • Green tea leaves
  • Fresh mint leaves

Both the smoothie and the tea are very refreshing and rejuvenating

Ingredients

  • Moroccan almond smoothie
  • Almonds, blanched, peeled 1 cup
  • Cold milk 1½ cups
  • Cinnamon (dalchini) powder 1 tsp
  • Sugar 4 tbsps
  • Orange essence 1 tsp
  • Orange zest, grated ¼ tsp
  • Ice cubes as required
  • Seedless apricots, finely chopped 1 cup
  • Moroccan tea
  • Green tea leaves 1 tbsp
  • Fresh mint leaves 10 + to decorate
  • Sugar 2 tbsps

Methods

  • To make Moroccan almond smoothie, grind almonds to a paste in a mixer.
  • Add milk, cinnamon powder, sugar, orange essence and orange zest and ice cubes and blitz for 2-3 minutes till it becomes a smooth and frothy. Transfer into a jar and refrigerate before serving.
  • Put some apricots in tall glasses, pour the smoothie over and serve chilled.
  • To make Moroccan tea, heat 2 cups water in a non-stick pan, add green tea leaves and mint leaves and mix well.
  • Add sugar, mix and boil.
  • Strain into a serving glasses, decorate with mint leaves and serve hot.
