- Medium carrots, peeled and chopped 2
- Medium potatoes, sliced 4
- Medium green capsicums, chopped 2
- Medium onions, chopped 2
Step 1. Boil 1½ cups of water in a deep non-stick pan, add carrot, potato, green capsicum, onion, corn kernels, thyme and salt, mix well and cook for 7-8 minutes or till all the vegetables are tender.
Step 2. Add tomatoes and cook for 2 minutes more or till the mixture thickens.

How to Make Healthy Vegetable Stew (Stepwise Photos)
Method
- Boil 1½ cups of water in a deep non-stick pan, add carrot, potato, green capsicum, onion, corn kernels, thyme and salt, mix well and cook for 7-8 minutes or till all the vegetables are tender.
- Add tomatoes and cook for 2 minutes more or till the mixture thickens.
- Remove the pan from heat and add spring onions and mix well.
- Transfer into a serving bowl and serve hot.
