Jalapeno pickle though spicy is very flavourful

Ingredients

  • Jalapenos 500 gms
  • Sugar 3 tbsps
  • Salt 2 tbsps
  • Olive oil 1 cup
  • Vinegar 1 tbsp
  • Mustard oil 1½ tbsps

Methods

  • Cut jalapenos into thin slices.
  • Take 1 cup water, sugar, salt, olive oil, vinegar and jalapenos in a bowl and mix well.
  • Heat mustard oil in a small non-stick pan till it begins to smoke. Cool slightly and add to the jalapeno mixture and mix well.
  • Transfer the mixture in an air tight sterilized jar and seal.
  • Let it mature for 1 month before serving.

  • Cabbage
  • Red chilli flakes
  • Fresh red chilli paste

Tangy pickles that will definitely whet your appetite

Ingredients

  • Medium cucumbers 2
  • White vinegar (sirka) 5 tbsps
  • Castor sugar 4 tbsps
  • Red chilli flakes 1 tsp
  • Salt 1½ tsps
  • Ginger, sliced 1 inch
  • Sesame (til) oil 2 tsps
  • Fresh red chilli paste 1 tsp
  • Cabbage, cut into square pieces 1 cup

Methods

  • Peel cucumbers and slice lengthwise and remove seeds.
  • Take 2 tbsps vinegar, 2 tbsps sugar, chilli flakes, ½ tsp salt, ginger, sesame oil in a bowl and mix well.
  • Add cucumber to the vinegar-sugar mixture and mix well so that all the cucumber pieces get well coated. Refrigerate or store in an airtight container.
  • Take 3 tbsps of vinegar, 2 tbsps sugar, 1 tsp salt, 1 tsp chilli paste in another bowl and mix well. Add cabbage pieces and mix well so that all the cabbage pieces are well coated. Refrigerate or store in an airtight container.
  • These pickles will keep for a week at least.
Pickled Pears

Key Ingredients:

  • Pears
  • Castor sugar
  • Vinegar
  • Ginger
  • Lemon juice
  • Lemon zest

A sweet pickle with the goodness of pears

Ingredients

  • USA Pears 2
  • Castor sugar 1 cup
  • Cloves 1 tsp
  • Black peppercorns 1 tbsp
  • Ginger, sliced 1 tbsp
  • Cinnamon 2 sticks
  • Lemon zest, grated 1 tsp
  • Lemon juice 2 tbsps
  • Vinegar 1 cup

Methods

  • Trim the two ends of the pears, core them and cut each pear into 4 equal pieces.
  • Heat a deep non-stick pan, add castor sugar, cloves, black peppercorns, ginger, cinnamon, lemon zest, lemon juice and vinegar and mix well.
  • Add pear pieces and cook till they soften.
  • Drain the pears and put into a bowl and continue to cook the liquid in the pan to make a concentrated syrup.
  • Place the pears in a pickle jar and pour the syrup over them. Pickled pears are ready to be served whenever needed.
