    • Salt to taste
    • Ginger juice 2 tsps
    • Lemon juice 1 tbsp
    • Rock salt to taste
    • Chaat masala to taste
    • Castor sugar 2 tsps
    • Ice cubes 3 to 4

How to Make Spiced Guava (Stepwise Photos)

Method

  1. Cook oats in a non-stick pan as per the instructions given on the packet.
  2. Take guavas in a bowl,add salt and mix. Transfer it into a blender jar and blend.
  3. Strain guava puree through a strainer into a deep bowl. Pour 1 cup water into the strainer and press the residue to extract all the juices.
  4. Put cooked oats, ginger juice, lemon juice, rock salt, chaat masala, castor sugar and add ice cubes into the blender jar and blend to a smooth purée. Add this puree to the guava puree and mix well.
  5. Pour the mixture into 4 serving glasses and serve chilled.

Thank you for the amazing instructions.

I have success w/ my dosa but does not last long stored in the refrigerator.

Maybe I am fermenting for too long, or add the salt before the rise?

I also was wondering if it is important to blend separately or can it be blended all together?

Hi Chaitrali,
Yes, cut down the fermentation time and add salt only to the required portion at the time of making the dosa. Also storing in smaller containers just enough for a day helps. Once the batter in a larger container is disturbed (by stirring or scooping out a little etc), I feel it turns sour faster. You can blend them together if you want. But we do it separately because we want the dal batter to become fluffy and the rice batter slightly coarse. Fluffy dal batter makes the dosas light and coarse rice batter makes them extra crispy without making the dosas hard. Hope this helps
